Flax Seed Bread Recipe – Wheat and Gluten-Free.  My favorite Bread recipe and made in the bread machine.  How easy can this get?

One of my best Christmas presents ever – my Oster Bread Machine. I got this awesome gift from my son two years ago and immediately put it to use because, as you know, nothing tastes better than your own baked bread. But then the novelty wore off and my new toy went with all my other “had to haves” – on the shelf, in the pantry, with all the other appliances, never to be seen again … until recently that is.

This bad boy has found his way back onto my kitchen counter ready to rock and roll once again. But finding wheat-free recipes for my newly rediscovered treasure has been a real challenge. Yes, there’s a plethora of gluten-free recipes out there, but only a handful of ones that are totally wheat-free as well. So it’s been a trial and error experience, to say the least, too embarrassing to even post the final loaves. They’ve been disfigured, thick, dry, flat – UGH. It’s not been a pretty scene in my kitchen.

But check this out – I finally found one worth passing on, compliments of “King Arthur Flour” (plus a little tweaking on my part), and wow – what a great loaf of bread this made. Ok, so maybe the top didn’t turn out as perfect as it should have, but if you can get past that, the bread itself was so moist and delicious. Makes me proud to post my Flax Seed Bread Recipe. This one is most definitely a keeper – I’m even making it again today !!

Flax Seed Bread Recipe – Wheat and Gluten-Free

Flax Seed Bread
Compliments of “King Arthur Flour”

Ingredients
1 2/3 cups lukewarm milk
3 large eggs, beaten
1 tablespoon apple cider vinegar
3 tablespoons vegetable oil
3 tablespoons honey
1 1/2 cups brown rice flour
2 cups potato starch
1/3 cup coconut flour
1 tablespoon xanthan gum
1 1/2 teaspoons salt
1/3 cups whole flax seeds
1 tablespoon active dry yeast

Directions
Place all the liquid ingredients (milk, eggs, vinegar, oil, and honey) into the bucket of your bread machine.

In a separate bowl, mix all the dry ingredients together, with the exception of the yeast. Then place all the dry ingredients ontop the wet ingredients. With your finger make a hole in the center and add the yeast (it’s bread machine rules to not let the yeast touch the wet ingredients).

If you have a gluten free setting, choose the gluten-free setting on the machine, and then the desired crust color/setting; press start. If you don’t have a gluten free setting like me, choose the BASIC bread setting and then the medium crust color/setting; press start.

When the cycle is finished and the bread is done, turn it out of the pan and onto a cooling rack. And try not to laugh at the top crust of my loaf of bread (hopefully yours will turn out better looking). But if it doesn’t, like I said earlier, roll on past that and just cut yourself a slice of this Flax Seed Bread … you’ll love it, regardless of how the top looks 🙂
