Low Carb Lentil and Zucchini Burgers

Easy 6 Ingredient Lentil and Zucchini Burgers. Believe it or not, what started out as an attempt to make fritters, turned into these delicious Lentil and Zucchini Burgers. I can’t even begin to tell you what happened in the fritter process, but after a couple trial and errors, these burgers were the end result – and I’m so happy they were.


This recipe only takes 6 ingredients, which is perfect if you’re in a money pinch. Plus you’re going to love this – they only have 22 gr of carbs per burger. And if you’re on a soft food diet, these will be perfect – trust me !!

They’re quick and easy to make especially if you’ve pre-made the lentils. I personally cooked the lentils in water for an hour until they are soft, and then stuck them in the fridge for later. So you can definitely make the lentils ahead of time. So anyways, grab the ingredients below and whip these burgers up today. Definitely a keeper if you’re looking for an easy dinner recipe.

Easy 6 Ingredient Lentil and Zucchini Burgers
Makes 6 Burgers

Ingredients
1 c cooked Lentils
1 med Zucchini, cut into 3 pcs
1/2 red Onion
1/4 c fresh chopped Parsley
2 tbls Flour or Bread Crumbs
1 tsp fresh Black Pepper
OPTIONAL – If you want to really zing the burgers, add ONE of these to the mix (a dash of Worchester sauce, curry powder, turmeric, or chili powder)

Instructions
If you haven’t pre-cooked the lentils, take 1 cup of dried lentils and place in a pot with 4-5 cups of water. Let cook over medium heat for an hour, or until they’re soft. Drain and smash lentils until they’re almost pasty. Set aside

Cut the top off the zucchini and remove the skin. Cut the zucchini into 3 sections, then halve each section. Cut them into lengthwise slices, try and make them as thin as a match stick. You can also grate the zucchini rather than slice them, just don’t use the small holes to grate with.

Slice the red onion and chop into small pieces. Place the onion and zucchini in a colander and top with 1/2 tsp salt. Toss together. This will remove the water from the vegetables. Let them sit for an hour then drain.

Mix the lentils, zucchini, and onion together. Add the parsley, ground pepper, and flour and mix them all together. Form into 6 burgers.

Heat a little bit of oil in a frying pan and add each burger (I cooked 3 at a time). The burgers will feel somewhat moist, but the longer you cook the burgers, the more liquid will be removed from them. Flip the burgers so each side gets cooked and turns a golden brown.

They’re quite tasty and very easy to make. Plus they’re perfect if you’re cooking on a tight budget. Enjoy
