Easy Homemade Fluffy Pancakes from Scratch

It’s an easy breakfast recipe for soft fluffy pancakes … AND IT DOESN’T COME FROM A BOX. This recipe makes 3 nice size hot cakes – enough for one person – which, as you can see by picture, will totally satisfy you even on your hungriest mornings.

They’re soft and fluffy, so there’s no need to worry about your pancakes coming out flat. And for extra flavor, add a handful of blueberries as they’re super easy on the gums, and some cinnamon. Oh so delish !!

Easy Homemade Fluffy Pancakes from Scratch
Makes 1 serving – 3 nice size hot cakes

Ingredients
3/4 c all-purpose Flour
1-1/2 tsp Baking Powder
1 tbls Sugar
Pinch of Salt
Pinch of Cinnamon
1 lrg Egg
3/4 c Milk
1/2 tsp Vanilla Extract
Handful of Blueberries
2 tbls Olive Oil or butter

Instructions
In a bowl, mix all the dry ingredients together – flour, baking powder, sugar, salt, and cinnamon.

In a separate bowl whisk the egg first. Then add the vanilla extract, and then add only a half cup of the milk. Blend the wet ingredients into the large bowl of flour mixture. Now add the blueberries.

If you find the pancake mix is too thick, add the remaining milk. I used the entire 3/4 c of milk and the pancake mix came out perfect as well as the cooked hot cakes.

Drop 1 tbls of olive oil or butter onto a large skillet and heat over medium heat. Then ladle a third of the pancake mix onto the heated skillet. You’ll notice them rising so keep an eye on them. Check the underside of the pancake, and when it gets to the desired brownness, flip it over and cook it in the same manner. If needed, add more oil or butter to the skillet for the remaining hotcakes.

Drizzle your cooked pancakes with syrup and voila – your breakfast is served my lady !! Enjoy 🙂

Easy Homemade Fluffy Pancakes from Scratch

NOTE: after your first pancake is made, your griddle or skillet will now be nice and hot, so your pancakes will cook even faster. You can turn the heat down a bit or just make sure to keep an eye on the underside of the next 2 pancakes so they don’t burn.
