The ABC List Of The Healthiest Vegetables: J for JERUSALEM ARTICHOKES & JICAMA.   Today’s post of the ABC’s Of Healthiest Vegetables, also known as the Healthiest Foods On Earth: Vegetable Series Beginning With The Letter J, includes Jerusalem Artichokes and Jicama. JERUSALEM ARTICHOKES sometimes referred to as prebiotics as it’s a healthy food for the “good” bacteria in your gut, and JICAMA which is low cal and full of fiber.   But wait … there’s even more so please keep reading.

In this 150 Healthiest Foods on Earth Series, I’ll be featuring vegetables that are packed with nutrients, vitamins and antioxidants – all of which are great for your health.  Based off the book by Jonny Bowden, these featured vegetables are a recipe for healthy living that hopefully everyone will take to heart like I have.    You’ll be amazed at how eating the right foods is just like having a pharmacy in your fridge and pantry.

JERUSALEM ARTICHOKES

THE ABC LIST OF HEALTHIEST VEGETABLES - jerusalem artichokesThis vegetable is a member of the sunflower family and are sometimes referred to as sunchokes (which is a cross between sunflower and artichoke). It has a high content of fructooligosaccarides and inulin, which are healthy foods for the “good” bacteria in your gut, thereby helping you maintain a health gut ecology. They’re sometimes referred to as prebiotics. The inulin is a form of soluble fiber that has been found to lower blood glucose, triglycerides, and LDL cholesterol, as well as inhibit the growth of various kinds of cancers.

But just be aware that inulin may cause flatulence (gas) in some people.

JICAMA

THE ABC LIST OF HEALTHIEST VEGETABLES - jicamaThis is a root vegetable, with a thin brown skin that you can peel. It looks like a turnip and tastes kind of like an apple. It is low in calories, low fat, mostly made of water (90%), and one cup contains 6g of fiber. Has lots of calcium, magnesium, potassium, vit C and A, and beta carotene. Plus its only 49 calories per cup.

Just bake or broil the jicama like a potato, or put it into your stir-fry.
