3 carrots, chopped or thinly sliced
4 small ribs celery, finely chopped
Salt and pepper
4 cups chicken broth
4 scallions, thinly sliced on an angle

In a large saucepan, melt the butter and brown the chicken lightly, about 5 min. Add the remaining ingredients, cover, and simmer until the chicken and vegetables are cooked through, approximately 30 minutes.

If you want to thicken up the soup a little, boil some noodles, rice or barley on the side and then add to the soup once they’re done cooking. Absolutely delicious
