30 Minute Meal – Swedish Meatball

Easy Swedish Meatball Recipe. If you’re looking for delicious meal to make for dinner, here’s a great one for the books. It’s easy, quick, not too many ingredients, and is on the table in 30 minutes. My kind of dinner seeing I’m always losing track of time and then jamming for a meal idea.

And after scouring for something with ingredients I already had on hand, I came across this Easy Swedish Meatball Recipe from Damn Delicious and said to myself … why didn’t I think of this? I used to make Swedish Meatballs all the time. And I have to be honest – it did not disappoint. I served it over spaghetti squash, as my squash crops really produced this year and now I have an abundance in storage. But you can serve it over the traditional egg noodles or mashed potatoes – whatever fits your flavor for the night. Either way … it’s a good one.

I did cut back on a few of the ingredients tho – the changes are reflected below as this meal was only being made for two … me and the hubs. And believe it or not, there were still leftovers. So whip this Easy Swedish Meatball Recipe up today and let me know what you think. HAPPY COOKING 🙂

Easy Swedish Meatball Recipe
Makes 2 servings

Meatball Ingredients
2 tbls Olive Oil
1 Onion, diced
1/2 lb Ground Beef
1/2 lb Ground Pork
1/2 c Bread Crumbs (I use seasoned)
1 Egg
1/4 tsp ground Allspice
1/4 tsp ground Nutmeg
Salt and Pepper to taste

Gravy Ingredients
1/4 c Butter
1/3 c all purpose Flour
4 c Beef Broth
3/4 c Sour Cream
Salt and Pepper to taste
2 tbls Parsley leaves

Easy Swedish Meatballs

Instructions
Sauté onions in 1 tbls olive oil until they become translucent. About 3 minutes.

In a large bowl, combine ground beef, ground pork, bread crumbs, egg, allspice, nutmeg and cooked onion; season with salt and pepper. Using your hands, mix all ingredients until combined. Then make your meatballs, rolling them into 1 1/4-to-1 1/2-inch balls.

Add remaining 1 tablespoon olive oil to the skillet and cook meatballs until all sides are browned – should take about 10 minutes tops. Move them to a plate lined with a paper towel.

For the gravy – melt the butter and then slowly whisk in the flour until all becomes lightly browned. Gradually add the beef broth so the gravy does not become lumpy, and cook while constantly mixing, until the gravy becomes slightly thickened. Season with salt and pepper. Add the meatballs to the gravy and cook for another 10 minutes. Garnish with parsley before serving.

And there you have it – easy peasy. Dinner done in 30 minutes.

NOTE: And whatever you decide to serve the meatballs over – whether it be egg noodles, mashed potatoes, gnocchi, or like me – spaghetti squash, get these rolling before starting the Swedish meatballs.
