The Easiest Creamy Rice Pudding Recipe. If you’re like me and always make way too much rice for your meals, here’s a great dessert recipe to try with your leftover rice.

My hubs has been after me to start making desserts – he’s the dude with the sweet tooth. Loves his chocolate, his fruits, cakes and pies. And when he saw a Tupperware full of leftover rice sitting in the fridge, he told me of the rice pudding his mom used to make for the family. So I thought sure – let’s give this one a go.

And boy was it easy to make and simply delicious. This is definitely one that I’m keeping in the recipe book, but not one that I’ll be making every week. It’s so addicting, easy to have 2 helpings in one sitting, and I can seriously see the pounds settling around my waist. But it is one that can be made every couple weeks or so.

So check out the recipe, whip this Creamy Rice Pudding up for dessert and let me know what you think. I did make one change and that was to the Vanilla Extract as I didn’t have any. I replaced it with a dash of Almond Extract. So so good 🙂 Enjoy

The Easiest Creamy Rice Pudding

Creamy Rice Pudding

Ingredients
¾ c COOKED White Rice
2 c Milk, divided
â…“ c White Sugar
¼ tsp Salt
1 Egg, beaten
â…” c Golden Raisins
1 tbls Butter
½ tsp Vanilla Extract
Cinnamon, Chopped Nuts, Seeds (optional)

Instructions
Combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt in a saucepan and cook over medium heat until thick and creamy – about 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg, raisins, butter and extract and cook for 2 more minutes. Scoop into bowls and top (totally optional) with your choice – cinnamon, chopped nuts, seeds
