Pink Salmon Cakes and Portobello Mushrooms – another quick and easy 30 Minute Meal.  These burgers are a mix of scallions, red pepper, almond meal, egg, and fresh dill – all together making this dish simply delish.

A total of 3.2 carbs and 447 Calories when you serve the Salmon Cakes over Portobello Mushrooms. However, if you’re not too hip to Portobella Mushrooms, the Salmon Cakes can be eaten by themselves for a low carb count of 2.4.

Pink Salmon Cakes and Portobello Mushrooms

Pink Salmon Cakes and Portobello Mushrooms
Serves 4
3.2 Carbs 447 Calories

Ingredients
4 lrg Portobello Mushrooms, stems removed
2 cans (6oz each) skinless and boneless Pink Salmon, drained and flaked ** See below for Fresh Salmon
3 tbls Extra Virgin Olive Oil divided
1/2 tsp Sea Salt, divided
2 Scallions, finely chopped (may substitute with 1/4 finely chopped Yellow Onion)
1/2 roasted Red Bell Pepper, finely chopped
2 tbls finely chopped Dill
1 egg, lightly beaten
1/4 cup Almond Meal

Instructions
Preheat the oven to 350°. Brush the tops of the mushrooms with one and a half tablespoons of the oil and place, stem side up, on a baking sheet. Drizzle half a tablespoon of the oil over the gills and sprinkle with 1/4 teaspoon of the salt. Bake for 10 minutes.

Meanwhile, in a medium bowl combine the scallion or onion, red pepper, salmon, egg, almond meal, dill, and the remaining half teaspoon of salt. Mix well.

Shape into 4 burgers. In a large skillet over medium heat, heat the remaining 1 tablespoon oil. Cook the burgers for 4 minutes, turning once, or until browned.

Place one burger on top of each mushroom. Bake for five minutes, or until heated through.

CAKES / BURGERS WITH FRESH SALMON

FRESH SALMON – they can be baked in the oven alongside the portobello mushroom. Just put the salmon on a separate foil-lined pan, brush with a drizzle of olive oil, and season with salt and pepper. Bake until they are cooked through, which usually takes 10-15 minutes. Let them cool before mixing in with the other ingredients.


Salad with Yogurt Ranch Dressing
11.3 Carbs 72 Calories

Ingredients
1/4 cucumber
1 med scallion
1 cup chopped lettuce
2 tsp Yogurt Ranch Dressing (below)

5.8 carbs 48 calories per 2 tsps

1/2 c Greek Yogurt
1 tbls Olive Oil
1 Garlic Clove, minced
1/4 tsp EACH dried dill, parsley, chives, garlic powder, black pepper
1/2 tsp EACH onion powder, mustard powder
1/2 tsp Salt
1 tsp white Sugar
3/4 tbls Lemon juice
Instructions – mix all ingredients in a bowl and let them sit for 30 minutes to allow the flavors to set in. Store in refrigerator
