Rhubarb Crisp Recipe – How to Make It. Spring is here and the gardens will be booming with rhubarb, strawberries, and raspberries. So why not make the most of your spring crops with this Rhubarb Crisp, a sweet ‘n tangy dessert covered with buttery oatmeal crumbles. YUMMO !! 😋

I found this recipe in a Woman’s World Magazine about 10 years ago, and have been making it religiously every spring with goodies from my own garden. And while it may look like there’s a lot of steps, this is one of the easiest desserts to whip together that can be on your plate in an hour. Make sure to serve this crisp warm – and definitely top it off with some ice cream. Your family will love it. Enjoy

Easy Rhubarb Crisp with Ingredients Straight from the Garden

Strawberry Rhubarb Crisp

Ingredients
4 c Rhubarb, cut into 1″ pieces
4 c Strawberries, halved if large. Can replace with raspberries or cranberries as well
1 1/4 c granulated Sugar
1 tbls Cornstarch
1/2 c Orange Juice
1 1/2 tsp grated Orange Zest
1 c all purpose Flour
1 c quick cooking Oats
1/2 c light Brown Sugar, lightly packed
1/2 tsp Salt
3/4 c unsalted Butter, diced

Instructions
Preheat your oven to 350 degrees. Line a jellyroll pan with parchment paper or foil.

In a large bowl, toss the rhubarb, strawberries or raspberries, 3/4 c granulated sugar and zest. Set aside.

In a measuring cup, add the cornstarch and orange juice together and mix until dissolved. Add this to the fruit mix above.

Pour the mixture into a 11″x8″ baking dish and then place the baking dish on top the jellyroll pan.

In another bowl, combine the flour, oats, brown sugar, salt and remaining 1/2 cup of granulated sugar. Cut in the butter and mix until all the dry ingredients are moist and mixture is in crumbles. You can use a butter cutter or place all in a mixer and beat on low speed.

Sprinkle the crumbles over the fruit, covering it completely. Bake for 1 hour or until fruit is bubbling and the topping is golden brown. And of course – SERVE WARM WITH ICE CREAM. Simply delish !!
