EGGPLANT

ABC List of the Healthiest Vegetables - EggplantThe power of purple – it’s from a substance called nasunin (a member of the anthocyanin catagory).  Nasunin is a powerful antioxidant that literally eats up free radicals (rogue molecules in your body that can cause serious damage to your cells and your DNA) which are partially responsible for aging. Nasunin protects against lipid peroxidation – which means it helps keep fats from turning rancid, including the fats in your body (like LDL cholesterol). Studies have shown that anthocyanins are highly protective of brain tissue, and other studies have shown that nasunin binds to iron.

1 cup of eggplant has 2.5 g of fiber, plus its only 35 calories. Slice up an eggplant in a salad, and you’ll add 18 g of fiber, 1,200 mg of potassium, niacin, folate, calcium, magnesium, phosphorus and phytosterols.

ENDIVE

ABC List of the Healthiest Vegetables - EndiveTwo cups of endive is only 8 calories. It has 26mg of calcium, 1/2 mg of iron, 157 mg of potassium, 71 meg of folate, more than 1,000 IU’s of vitamin A (650 of beta-carotene), and 115 mg of vitamin K.

Toss them with some walnuts and sliced pears and maybe with some blue cheese and olives. Add some olive oil to the mix.
