FAT FLUSHING CABBAGE AND TURKEY SOUP

Fat Flushing Cabbage and Turkey Soup
Soup base from Summer Yule recipe
4 Servings

INGREDIENTS
1 tbls Olive oil
1-1/2 lb Ground Turkey
1 Medium Onion, diced
3 medium Zucchini, chopped
3 Garlic cloves, minced
10 oz Portabella Mushrooms
1 Bell Pepper, chopped
1 Red Bell Pepper, chopped
2 Jalapeno Peppers, chopped (seeds removed for less heat)
1 c chopped Cabbage
2 Scallions, chopped
2 c Diced Tomatoes
6 c Turkey Broth ( I use College Inn)
1 Lime – juiced
1 tsp Coriander, dried
1/4 c Cilantro, dried
1/4 c fresh Parsley, chopped
1 tbls Cumin
Salt & Pepper to taste

INSTRUCTIONS
Heat the olive oil in a large pot over medium heat and cook the ground turkey until browned (10 minutes) – drain if necessary. While the turkey is browning, chop the sweet peppers, medium onion (or blitz them in your food processor) zucchini, scallion, mushrooms, tomatoes, cabbage, garlic, parsley, cilantro, and jalapenos. Then add everything, you’ve chopped, (less the scallions), to the pot and cook for an additional 5 minutes.

Then add the broth to the pot along with the remaining spices and simmer for 10 minutes. Add the scallions and cook for an additional 5 minutes. Easy breezy – your soup should be done in 30 minutes.
