Bistro Steak with Red Wine Sauce – 30 Minute Meal

Ingredients
4 boneless beef Strip Steaks, 3/4″ thick 6 oz each
1/2 tsp Pepper
2 tsp Olive Oil
2 tsp Butter
Salt
1/4 c Shallots, minced
1 lrg Garlic clove, minced
1/4 tsp dried Herbes de Provence
1/3 c Red Wine
1/2 c Beef Broth
1 tbls Dijon Mustard
2 tbls chopped fresh Parsley

Instructions
Dry the steaks by patting down with paper towel and then season with pepper. Heat a large skilled until hot and add the oil and rubber. Increase the heat to high.

Add the steaks and cook. For medium rare – turn once until brown, about 1 minute per side. For medium – do the same but for 2-3 minutes per side. Remove from pan, season with salt, and keep warm on serving platter.

Add the shallots, garlic and herbes to the skillet, cook and stir for 2 minutes until softened. Stir in the wine and cook, scraping up the bits from the bottom of the pan. Let liquid reduce, which should take about 2 minutes.

Stir in the broth, mustard and the parsley, and add pepper and salt to taste. Cook for about 3 minutes until it is slightly reduced. Then spoon the sauce over the steaks.

Serve with roasted vegetables and potatoes if desired.
